Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Larks
Provide the main meat, which browns in the butter and becomes tender as it cooks.
Butter
Carries heat for browning the larks and adds richness to the finished sauce.
Espagnole sauce
Forms the base of the sauce, giving body and a savoury, deeply flavoured coating.
Mushrooms
Add earthy flavour and a soft texture to the sauce.
Glaze
Adds concentrated savoury flavour and gloss to the sauce.

The step that matters

Fry the larks until browned and nearly cooked. Browning relies on dry surfaces and enough heat, so crowding the pan or overcooking makes the meat steam or toughen. Stopping just short of done lets the larks finish gently in the sauce without drying out.

Swap the lemon

How well each one fits the dish's main ingredients (butter, pepper, sauce, mushroom):

  1. Lemonthe original
  2. Plumfits about as well
  3. Mangofits about as well
  4. Avocadofits less well

Fit is the average pairing score against butter, pepper, sauce, mushroom. Candidates are from the same food group and used in at least 100 recipes.
