What each ingredient does

Savoy cabbages
Form the main body of the garnish, becoming tender and mild during long braising.
Fat bacon
Adds savoury fat and flavour to the stewpan as the cabbages braise.
Broth
Provides the moist cooking liquid that braises the cabbages gently.

The step that matters

Gently boil on low heat. Cabbage needs a slow, low simmer to turn tender without breaking apart or drying out. A hard boil can tear the halves and make the texture ragged.
