What each ingredient does

Anchovies
Dissolve into the liquid to add deep, salty, savory flavor.
Capers
Add a sharp, briny bite that cuts through the richness.
Shallots
Provide a mild, aromatic onion flavor that builds the base.
Mushroom catsup
Adds savory umami depth and a dark, rounded color.
Consommé
Supplies the liquid base and savory body for the essence.
Lemon juice
Adds acidity that brightens and balances the savory flavors.

The step that matters

Boil until reduced by half. Reduction concentrates flavor as well as salt, so the essence can turn harsh or overly salty if reduced too far. Watch the volume and stop once it is halved.

Swap the mace

How well each one fits the dish's main ingredients (capers, shallot, thyme, pepper, mushroom, lemon):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against capers, shallot, thyme, pepper, mushroom, lemon. Candidates are from the same food group and used in at least 100 recipes.
