Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gravy beef
Releases gelatin and meaty flavor into the broth as it simmers slowly.
Knuckles of veal
Rich in collagen, which dissolves into the broth to give body and a silky mouthfeel.
Wild rabbits
Adds deeper, gamier meat flavor and more savory richness to the broth.

The step that matters

Allow the broth to boil gently for six hours. A vigorous boil makes the broth cloudy by breaking up fat and proteins, while a gentle simmer lets collagen dissolve and impurities rise to be skimmed, keeping the consommé clear.

Swap the carrot

How well each one fits the dish's main ingredients (beef, veal, rabbit, butter, meat, turnip, leek):

  1. Shallotfits better
  2. Chivefits about as well
  3. Asparagusfits about as well
  4. Carrotthe original

Fit is the average pairing score against beef, veal, rabbit, butter, meat, turnip, leek. Candidates are from the same food group and used in at least 100 recipes.
