Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef ribs
Provide the meat that becomes tender during long, slow braising.
Sherry or madeira
Adds wine flavour and aroma to the braising liquid.
Brandy
Adds aromatic depth to the braising liquid.
Consomme
Supplies savoury stock that keeps the meat moist and forms the sauce base.

The step that matters

Simmer gently for 3 to 4 hours. Gentle heat lets collagen in the connective tissue slowly break down into gelatin, making the meat tender and moist. A hard boil toughens the meat by tightening its fibres and drying the surface.

Swap the onion

How well each one fits the dish's main ingredients (beef, sherry, brandy, carrot, turnip):

  1. Parsnipfits better
  2. Leekfits better
  3. Arrowrootfits better
