What each ingredient does

Spinach
Forms the bulk of the dish and gives it its green colour and earthy flavour.
Double cream
Adds richness and a smooth, silky texture that coats the spinach.
Butter
Adds fat for richness and a smooth mouthfeel, carrying the flavour of the dish.
Nutmeg
Adds a warm, aromatic flavour that complements the spinach and cream.

The step that matters

Rub the spinach through a sieve. Chopping or pounding and sieving breaks the leaves into a fine, even pulp. Leftover water or coarse pieces make the sauce watery or grainy once the cream is added.
