Ingredients

Directions

Prepare the nuts

  1. Scald the filberts, remove the skins, and split each kernel into four pieces lengthwise.

  2. Dry the nuts on a baking sheet in the oven.

Make the nougat

  1. Stir the powdered sugar in a boiler over heat until ready, then mix the dried nuts into the sugar.

  2. Prepare six small molds, oiling the insides.

  3. Fill each mold with the nougat mixture, using a stick to press it into the sides.

  4. Trim any excess nougat above the edge of the molds.

  5. Turn the nougats out onto a baking sheet.

Assemble and serve

  1. Fill each nougat with whipped cream flavored with vanilla or maraschino and top with strawberries.

  2. Arrange the nougats in a pyramidal form on a napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Filberts
Provide the nutty flavor and the solid body of the nougat.
Powdered sugar
Melts into a syrup that binds the nuts and sets as the nougat cools.
Whipped cream
Adds moisture and a light, creamy texture to the filling.

The step that matters

Stir the powdered sugar over heat until ready. Sugar that is overheated or left too long can darken, turn bitter, or harden too much, so it should be watched closely and used at the right moment.

Swap the filbert

How well each one fits the dish's main ingredients (sugar, cream, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Filbertthe original

Fit is the average pairing score against sugar, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
