What each ingredient does

Jelly
Sets into the light, airy structure once whipped and chilled.
Ice
Keeps the jelly cold so it thickens while being whipped and holds its shape.

The step that matters

Whip the jelly while it is cold and just starting to thicken. Whipping adds air bubbles that the partly set gel holds in place. If the jelly is too warm, it stays runny and the froth collapses; if it sets too firmly, it cannot be whipped smoothly into a foam. Pouring straight after whipping locks the air in before it drains away.
