Almond Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Pound the sweet and bitter almonds with the sugar and vanilla until fine.

  2. Mix in the butter, orange rind, salt, egg yolks, and whole egg until combined.

  3. Pass the mixture through a medium sieve into a basin and stir for a few minutes.

Assemble the cake

  1. Roll out the puff pastry to ¼ inch thick and cut out two 6‑inch rounds.

  2. Place one round on a baking sheet and spread the almond mixture over it, leaving a ½ inch border.

  3. Wet the edge with water and place the second round on top, pressing gently to seal.

  4. Decorate the edges and brush the top with egg white, marking a pattern with a knife.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for 45 minutes.

  2. Sprinkle with caster sugar and return to the oven for 5‑10 minutes to glaze.

  3. Serve cold on a folded napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet and bitter almonds
Provide the main body and nutty almond flavour of the filling.
Butter
Adds richness and a tender texture to the almond filling.
Egg yolks
Bind the filling and add richness and structure as it bakes.
Sugar
Sweetens the filling and helps the top brown and glaze in the oven.
Puff pastry
Forms the flaky, layered outer case that rises and crisps in the oven.

The step that matters

Sealing the pastry edges. If the edge is not wet and pressed firmly, the two rounds can separate in the oven, letting the filling leak and the pastry rise unevenly.

Swap the orange

How well each one fits the dish's main ingredients (almond, sugar, vanilla, butter, egg):

  1. Figfits better
  2. Coconutfits better
  3. Peachfits better
  4. Orangethe original

Fit is the average pairing score against almond, sugar, vanilla, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
