Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Mix sugar with the egg whites.

  3. Spread the mixture over the marmalade and bake until golden-brown.

  4. Roll out puff pastry thinly and place on a baking sheet.

  5. Spread Apricot Jam over the pastry.

  6. Roll out another piece of pastry and place it on top.

  7. Mix chopped almonds with an equal amount of sifted sugar.

  8. Add the whipped egg white to the almond mixture and spread over the top crust.

  9. Bake in a moderate oven at 350°F (175°C) until done.

  10. Allow to cool, then cut into diamonds or oblongs.
