What each ingredient does

Bael fruit
Forms the body of the preserve, providing the fruit flesh that is cooked in syrup.
Strong syrup
Sweetens the fruit and preserves it by drawing out moisture while cooking.

The step that matters

Simmering over low heat. Gentle heat lets the syrup penetrate the slices and the sugars slowly caramelise to a rich light brown. High heat can scorch the sugar before the fruit is evenly cooked.
