Barley Sugar

Ingredients

Directions

  1. Mix the yolks of 8 eggs in a bowl.

  2. Heat the mixture in a saucepan over low heat until it thickens, stirring well.

  3. Dissolve 1 oz of isinglass in ½ cup of warm water and add it to the thickened mixture.

  4. Pour the mixture into a greased mold and let it cool.

  5. Once cool, ice the mixture carefully to prevent melting.

  6. If not using isinglass, use 12 egg yolks instead of 8.
