A LA Mode Beef

Ingredients

Directions

  1. Wipe and trim the beef, then place it in a deep dish.

  2. Pour spiced vinegar over the beef and let it marinate for several hours, turning often.

  3. To make spiced vinegar, boil vinegar with chopped onion, salt, mustard, pepper, cloves, and allspice for 5 minutes.

  4. Dress the beef with strips of salt pork, inserting them with a larding needle or by boring holes in the meat.

  5. Alternatively, make large incisions and stuff with seasoned breadcrumbs moistened with hot water, butter, and beaten egg.

  6. Tie the beef into shape with a strip of cotton cloth to keep in the stuffing, then dredge with flour.

  7. Fry the chopped onions, carrot, and turnip in fat until golden.
