What each ingredient does

Fillet of beef
Forms the main body of the dish, cooked by direct grilling.
Ox marrow
Adds richness and moisture inside the slices as it softens with heat.
Warm butter or oil
Brushed on the outside to aid browning and keep the surface from drying.
Lemon juice
Added at the end to brighten the rich beef and marrow with acidity.

The step that matters

Grill over a clear fire for 10 to 15 minutes. A clear fire gives steady, even heat rather than flare-ups from dripping fat. Too little heat leaves the marrow cold, while too much chars the outside before the centre cooks through.

Swap the lemon

How well each one fits the dish's main ingredients (beef, pepper, onion, butter):

  1. Avocadofits better
  2. Mangofits about as well
  3. Lemonthe original
  4. Limefits about as well

Fit is the average pairing score against beef, pepper, onion, butter. Candidates are from the same food group and used in at least 100 recipes.
