Boasted Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beef

  1. Place the beef on sticks in a roasting pan, ensuring it does not touch the water at the bottom.

  2. Season the beef with coarse sea salt and black pepper.

  3. Do not salt the beef until it is taken off the spit.

Roast and serve

  1. Roast in a 400°F (200°C) oven for 3 to 4 hours, basting often with the water in the pan.

  2. Wrap the beef in white paper and remove it 15 minutes before serving.

  3. Serve the beef on a large dish without gravy or garnish, or with them served separately.
