What each ingredient does

Crayfish
Provides the main protein and delicate flavor of the salad.
Hard-boiled eggs
Add firm, creamy texture and rich body to the molded dish.
Aspic jelly
Sets into a clear gel that holds the molded shape and coats the eggs.
Mayonnaise sauce
Adds fat and creaminess, thickening the salad and binding it together.
Lettuce
Adds crisp, watery texture that contrasts with the rich dressing.

The step that matters

Let the aspic set before turning out. Aspic is a gelatin-based jelly that only firms when fully chilled. Turning it out too early can cause the mold to collapse or the shape to slump, so it needs to set firmly in the cold first.

Swap the lettuce

How well each one fits the dish's main ingredients (crayfish, vinegar, sauce, egg, truffle):

  1. Shallotfits better
  2. Asparagusfits better
  3. Mustardfits better
  4. Lettucethe original

Fit is the average pairing score against crayfish, vinegar, sauce, egg, truffle. Candidates are from the same food group and used in at least 100 recipes.
