Why it works: Almond and vanilla match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,961 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Darioles

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Combine caster sugar, vanilla, flour, ground almonds, and eggs in a bowl, mix well and strain through a sieve.

  2. Gradually beat in the milk until smooth.

Fill and bake

  1. Butter and line Dariole molds with short pastry, placing a small piece of butter at the bottom of each.

  2. Fill the molds with the mixture and place them on a baking sheet.

  3. Bake in a preheated oven at 350°F (175°C) for 30 minutes.

Finish and serve

  1. Turn out the Darioles, sprinkle with vanilla-flavored caster sugar, and glaze in the oven for 5 minutes.

  2. Serve cold on a decorative dish, garnished with crystallized fruits.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and help it set firm when baked.
Ground almonds
Add body, richness and a nutty flavor to the filling.
Flour
Gives the batter structure so it holds its shape as it bakes.
Milk
Loosens the batter to a smooth, pourable consistency and adds moisture.
Caster sugar
Adds sweetness and helps the top brown when glazed.

The step that matters

Strain the batter and beat in the milk until smooth. Straining removes lumps from the ground almonds and egg, and gradually adding milk prevents lumps forming, giving a fine, even texture after baking.
