Why it works: Butter and cream are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 41,516 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Ginger Cake
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
In a saucepan, combine treacle and butter over gentle heat until melted.
Mix sugar and flour in a bowl, then stir in the melted butter and treacle along with the cream.
Butter sheets of white paper and line a cake tin with them.
Pour the mixture into the lined tin and bake in a slow oven at 300°F (150°C) for 1 hour.
Once cooked, remove the cake from the tin and peel off the paper.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
