Bottled Green Gooseberries

Ingredients

Directions

Prepare the fruit

  1. Cut the tops and stalks off the gooseberries and wipe them dry.

  2. Pack the gooseberries in wide-mouthed glass bottles.

  3. Add 1 tablespoon of powdered sugar for each cup of gooseberries.

Heat and seal

  1. Stand the bottles in a deep saucepan with cloths between them to prevent cracking.

  2. Fill the saucepan with salted water and keep it boiling.

  3. Add more fruit to the bottles as they sink down.

  4. When steam begins to escape from the bottles, cork them while the saucepan is still on the heat.

  5. Once cooled, seal the corks with wax.

  6. Leave the bottles in the water until it cools, then wipe and store in a dry cupboard.

What each ingredient does

Green gooseberries
Provide the fruit that is preserved whole in the bottles.
Powdered sugar
Adds sweetness and helps the fruit keep its flavour during storage.

The step that matters

Standing the bottles with cloths between them. Glass bottles heated quickly in boiling water can crack from thermal shock. Cloths between the bottles keep them from touching the metal and spread the heat more gently.
