What each ingredient does

Greengages
Provide the main fruit, whose flesh softens and becomes tender when stewed.
Sugar
Sweetens the fruit and syrup while helping shape the stewed texture.
Red curaçao
Adds orange-citrus aroma and flavour to the finished stewed fruit.

The step that matters

Stirring gently during the 5-minute cook. Stirring vigorously breaks down the softened fruit into a mash, ruining the whole-fruit texture. Gentle stirring keeps the greengage halves intact while the sugar syrup forms.
