Ingredients

Directions

Prepare the fowl

  1. Pluck, singe, and draw the Guinea Fowl, then remove the breastbone.

  2. Stuff the body with quenelle forcemeat and truffles.

  3. Truss the fowl, bringing the feet back to the tail, and lard the legs and fillets with bacon.

Braise

  1. Place the fowl on bacon and vegetables in a saucepan.

  2. Add white wine and cook over a bright fire with hot ashes on the lid until reduced to half‑glaze.

  3. Add broth and braise gently over a very slow fire.

  4. Glaze the fowl with its own cooking stock when reduced.

Garnish and serve

  1. Prepare a garnish with mushrooms, truffles, cocks' combs, and quenelles, mixed or grouped.

  2. Mask the garnish with brown sauce reduced with truffle trimmings and a little white wine.

  3. Place the fowl on a dish in the center of the garnish and decorate with truffles and cocks' combs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Truffles
Provide a concentrated, earthy aroma that perfumes the stuffing and the sauce.
Bacon
Adds fat and savoury flavour, basting the lean fowl as it cooks.
White wine
Adds acidity and depth, helping to lift and concentrate the braising liquid.
Broth
Provides moisture so the fowl braises gently without drying out.
Button mushrooms
Contribute savoury, umami flavour and a tender texture to the garnish.
Quenelle forcemeat
Gives a soft, delicate texture to the stuffing and garnish.

The step that matters

Braising over a very slow fire. Once the broth is added, gentle low heat lets the connective tissue soften while the meat stays moist. Too much heat toughens the proteins and dries the fowl.
