What each ingredient does

Hominy
Forms the main body of the dish and becomes tender through long simmering.
Butter
Adds richness and moisture to the finished hominy.

The step that matters

Simmer gently until very tender. Hominy has a tough, dense kernel that only softens after a long, gentle simmer. Boiling hard can break the kernels apart and leave the centers firm, so keep the heat low and the liquid just moving.
