Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the cold cooked meat in water or stock to make a stiff paste.

  2. Form the paste into an oval loaf and place it in a well-greased shallow pan.

  3. Make holes all over the loaf with a skewer and insert strips of fat bacon.

  4. Bake in a 400°F (200°C) oven until quite brown, about 30-40 minutes.

  5. Serve without basting, as the bacon fat will keep it moist.
