Baked Mushrooms

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut off the stalks of the mushrooms and remove the outer skin.

  2. Place the mushrooms on a buttered plate, sprinkle with salt and pepper, cover with another plate.

  3. Bake in a 350°F (175°C) oven until done, basting with the mushroom liquor.

  4. Clean the mushrooms and cut bread slices about 2 inches square, trimming off the crusts.

  5. Spread each bread slice with butter, sprinkle with salt and pepper, and place a mushroom top on each slice.

  6. Bake in a 400°F (200°C) oven for five minutes, then season the mushrooms with salt and pepper and add a piece of butter on top.
