What each ingredient does

Okra
Forms the main body of the dish and thickens slightly as it cooks.
Butter
Carries the flavour of the onion and pepper and helps them brown.
Onion
Builds a sweet, savoury base as it turns golden.
Tomatoes
Add moisture and acidity that combine into a sauce around the okra.
Spanish sauce
Adds tomato-based depth and body to the sauce.

The step that matters

Cooking the okra slowly, covered. Covered, slow cooking traps steam so the okra softens evenly in the tomato mixture. Higher heat or uncovered cooking can scorch the sugars in the sauce and leave the okra unevenly cooked.

Swap the clove

How well each one fits the dish's main ingredients (okra, butter, onion, pepper, tomato, sauce, garlic):

  1. Cuminfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against okra, butter, onion, pepper, tomato, sauce, garlic. Candidates are from the same food group and used in at least 100 recipes.
