Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Partridges — Continued

Ingredients

Directions

  1. Remove the flesh from roasted partridges and cut it into small dice.

  2. In a bowl, mix the diced partridge with bechamel sauce and game glaze until brown, then let it cool.

  3. Shape the mixture into small cork-like pieces.

  4. Dip each piece in beaten egg, then roll in breadcrumbs.

  5. Heat lard or clarified fat in a frying pan until it smokes.

  6. Fry the croquettes until golden brown, then drain them.

  7. Arrange the croquettes on a hot dish, garnish with fried parsley, and serve.
