Why it works: Peach and vanilla match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 558 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Compote of Peaches with Rice
Ingredients
Directions
Prepare the rice
Boil the rice and slightly sweeten it, flavor with vanilla, and mix in the yolk of an egg.
Wash the rice, blanch it for 8–9 minutes, then drain.
Put the rice in a saucepan with enough warm milk to cover it, adding more milk as it dries.
When the rice is nearly cooked, add the stick of vanilla and caster sugar, then cover for 10 minutes.
Butter a border mold and mix the butter with the rice, pressing it into the mold.
Keep the rice warm for 10 minutes, then turn it out onto a dish.
Prepare the peaches
Prepare a compote of peaches by splitting them in half and removing the stones.
Plunge the peaches in boiling water to loosen their skins, then drain and peel.
Cover the peaches with syrup at 30 °C.
Assemble and serve
Fill the center with the peach halves, building them in a pyramid shape.
Reduce some syrup with a little apple juice and pour it over the peaches.
Blanch and peel the almonds, split them in half, and stick one on each peach.
Serve with the remaining syrup mixed with a little maraschino in a sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rice
- Starch that absorbs milk and sugar, forming the set, creamy border around the peaches.
- Peaches
- Provide the fruity, juicy centerpiece and the main flavor of the dish.
- Butter
- Adds richness and helps the rice release from the mold while giving a silky mouthfeel.
- Caster sugar
- Sweetens the rice and contributes to its tender, creamy texture.
- Egg yolk (in the method)
- Enriches the rice and helps bind it into a cohesive, sliceable mass.
The step that matters
Pressing the rice into the buttered mold. Rice that is packed unevenly or cooled too long can crumble or stick when unmolded. Firm, even pressing and brief warm rest help the border hold its shape.
Swap the apple
How well each one fits the dish's main ingredients (rice, peach, vanilla, sugar, butter, syrup, almond):
