What each ingredient does

Isinglass
Sets the mixture as it cools, giving the bavarois its firm, sliceable body.
Whipped cream
Adds lightness and a smooth, creamy texture and richness to the set dessert.
Pineapple
Supplies the main fruit flavor, with its natural sweetness and acidity.
Loaf sugar
Sweetens the dessert and balances the acidity of the pineapple.

The step that matters

Adding the cream as the mixture begins to set. Isinglass sets as the mixture cools, so the cream should be stirred in only once the mixture just starts to thicken. Added to a warm, runny liquid, the cream can rise, separate, or fail to stay evenly distributed, leaving a loose or uneven bavarois.

Swap the pineapple
