Why it works: Pepper and allspice match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Pork Sausages

Ingredients

Directions

Prepare the casing

  1. Clean and prepare the intestines of an ox by soaking in salted water for 4 days, turning frequently.

  2. Scrape the insides clean and soak in slightly salted water until needed.

Make the filling

  1. Soak 10 lb of pork in brine for a week, then drain and mince finely.

  2. Mix minced pork with 1 lb of salt, 1 oz of pepper, and 1 teaspoon of allspice.

  3. Stuff the mixture into the prepared intestines, tie securely, and wrap in muslin.

Smoke and serve

  1. Smoke the sausages for 12 to 14 days, then rub with pepper and hang in a cold place until needed.

  2. When ready to serve, boil the sausages, let them cool, then slice and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork with fat
Forms the meat base, and its fat keeps the sausage moist and tender as it cooks.
Salt
Seasons the meat and helps draw out moisture and firm up its texture during curing.
Pepper
Adds sharp aroma and flavour, and is also rubbed on the outside during smoking.
Allspice
Adds warm, aromatic flavour to the meat mixture.

The step that matters

Smoking the sausages. Smoking for 12 to 14 days needs a steady, controlled environment. Too much heat or uneven airflow can dry the outside or spoil the meat before the sausage is fully preserved.

Swap the allspice

How well each one fits the dish's main ingredients (pork, pepper):

  1. Sagefits better
  2. Thymefits better
  3. Marjoramfits better
  4. Allspicethe original

Fit is the average pairing score against pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
