Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Prepare the forcemeat by finely grinding your choice of meat.

  2. Season the forcemeat with salt and pepper.

  3. Using two spoons, shape the forcemeat into smooth, equal-sized balls.

  4. Grease a baking dish with butter and place the quenelles inside.

  5. Cook in a moderate oven at 350°F (175°C) until firm and lightly browned.
