Fillets of Rabbit

Ingredients

Directions

  1. Cut the fillets off the rabbits and trim them to a nice shape.

  2. Lard the fillets with thin strips of bacon.

  3. Melt the butter in a saucepan, then mix in the flour.

  4. Gradually stir in enough water to make a stiff paste, then remove from heat and let cool.

  5. Prepare the sauce by pouring the brown sauce and broth into a saucepan, then boil and skim it.

  6. Mix in the tomato sauce, sherry, blanched mushrooms, and quenelles, seasoning with salt and pepper.

  7. On a hot dish, lay a pile of mashed potatoes, then arrange the fillets on top, with plain ones on one side and larded ones on the other.

  8. Mask the plain fillets with a small quantity of sauce, then pour the rest with the quenelles and mushrooms in the center of the dish.
