Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young rabbit
Provides the main flavor and body of the broth as it simmers.
Veal or beef bones
Release gelatin and savory flavor into the water during long simmering.
Onions
Add sweetness and aromatic depth to the broth.
Carrots
Contribute gentle sweetness and color to the broth.

The step that matters

Skimming during the boil. Foam and fine impurities rise to the surface as the water heats. Skimming them early keeps the broth clear and prevents off flavors from being reabsorbed during the long simmer.

Swap the onion

How well each one fits the dish's main ingredients (rabbit, veal, carrot, parsley):

  1. Turnipfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against rabbit, veal, carrot, parsley. Candidates are from the same food group and used in at least 100 recipes.
