Raisin Roly-Poly

Ingredients

Directions

  1. In a saucepan, combine cold water and cream of tartar. Heat over moderate fire until it forms a soft jelly in cold water.

  2. Remove from heat and let it stand covered for a few minutes. Beat until smooth with a wooden spoon.

  3. Flavor with extract of roses and work in the raisins. If too soft, add confectioner's sugar; if too stiff, add jelly or rich cream.

  4. Roll out the mixture with a rolling pin, spread a thin layer of strawberry jelly, and roll it up.

  5. Make icing by beating egg white with confectioner's sugar and extract of roses until stiff. Spread over the rolled mixture and let it harden.

  6. Cut into thin slices and serve on a glass dish.
