Ingredients

Directions

  1. Cut the French rolls into moderately thick slices and place them in a deep dish.

  2. Beat the eggs with the milk and pour over the bread slices. Let soak well.

  3. Melt the butter in a saucepan, then add the yolks of the hard-boiled eggs, parsley, tarragon, and burnet. Stir over heat for 5-6 minutes.

  4. Add the capers, lemon juice or vinegar, gravy, salad oil, and mustard. Thicken with grated breadcrumbs and mix well.

  5. Skin and bone the sardines, mince them, and mix into a smooth paste.

  6. Fry the soaked bread slices in butter until delicately browned, then drain them.

  7. Spread the sardine paste over the fried bread slices and arrange them in a circle on a hot dish.

  8. Fill the center with poached eggs and pour the sauce over. Place in a hot oven for 2-3 minutes, then serve.
