Why it works: Capers and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 624 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Sardine Sandwiches

Ingredients

Directions

  1. If the sardines are large, split them in half; if small, leave them whole.

  2. Place sardines on slices of bread, sprinkle with chopped hard-boiled egg, and season with salt, pepper, and lemon juice.

  3. Cover with another slice of bread, cut into finger lengths, and serve.

  4. For another version, use thin slices of rye bread.

  5. On half, place a slice of Swiss cheese, then sardine fillets, and sprinkle with minced capers.

  6. Spread German mustard on the remaining slices, cover the fish, and press gently together.

  7. Cut into halves or lengths, garnish with parsley, and serve.
