Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turbot
Firm white flesh that holds its shape through marinating and frying.
Saffron
Provides the golden colour and distinctive aroma of the dish.
Lemons
Add acidity that brightens the flavour of the fish.
Olive oil
Conducts heat in the pan and promotes browning of the fish surface.

The step that matters

Frying until nicely browned. The fish should be drained well after marinating so excess moisture does not stop the surface from browning. Too little heat or a crowded pan makes the fish steam instead of developing a golden crust.

Swap the saffron
