Pried Vegetable Marrow

Ingredients

Directions

Prepare

  1. Peel the vegetable marrow, remove the seeds, and cut it into pieces about 1.5 inches long and 0.5 inches wide.

  2. Sprinkle the pieces with coarse sea salt and let them sit for 1-2 hours.

  3. Wrap the pieces in a cloth and twist to extract juice without breaking them.

  4. Dredge each piece in flour until well coated.

Fry and serve

  1. Heat clarified fat in a stewpan until boiling, then add the pieces in a frying basket.

  2. Fry until browned, then remove and lightly dust with salt.

  3. Drain on paper in front of the fire for 1-2 minutes.

  4. Serve on a hot dish lined with fancy paper.

What each ingredient does

Vegetable marrow
Forms the main body of the dish, becoming tender inside while its outside fries crisp.
Flour
Coats the pieces so they brown and crisp in the hot fat.
Clarified fat
Transfers heat evenly to the pieces, browning and crisping their surface while frying.

The step that matters

Twist the salted pieces in a cloth. Salting draws moisture out of the marrow. Squeezing off this released juice before dredging helps the flour coating stick and keeps the fat from spattering and the crust from going soggy.
