Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together in a bowl using a wooden spoon.

  2. Add the eggs one at a time, beating well after each addition.

  3. Blanch the Brazil nuts, then pound them with the ground rice until fine.

  4. Stir the nut and rice mixture into the other ingredients.

  5. Add the brandy and mix everything well.

Fill and bake

  1. Butter small round tins and fill each with the mixture.

  2. Place a glace cherry in the center of each cake.

  3. Sprinkle with sugar and bake in a moderate oven (350°F / 175°C) for 40 minutes.

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cakes a tender, rich crumb.
Eggs
Add structure and lift as they set in the oven, binding the batter together.
Brazil nuts
Provide body, oiliness and a moist, rich texture to the crumb.
Ground rice
Adds a fine, slightly crisp texture and helps the cake hold its shape.
Sugar
Sweetens the cake and helps create a light texture when creamed with butter.
Brandy
Adds aroma and flavour and contributes moisture to the batter.

The step that matters

Creaming the butter and sugar. Beating butter and sugar until light traps air bubbles that expand in the oven. Under-creaming leaves a dense cake, while over-softened butter can collapse the batter.
