Balmoral Cake

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Break the eggs into a bowl and add the sugar.

  2. Place the bowl over a saucepan of hot water and beat the mixture for 20 minutes until thick and creamy.

  3. Sift in the flour and gently fold it into the egg mixture.

Bake and cool

  1. Grease a cake tin and sprinkle it with sugar.

  2. Pour the batter into the prepared tin and bake at 300°F (150°C) for 20 to 30 minutes.

  3. Turn the cake out onto a wire rack to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked with sugar to trap air, giving the cake its light, airy structure.
Sugar
Sweetens the cake and helps the egg foam hold its volume while beating.
Flour
Provides the starch that sets during baking to form the cake's final structure.

The step that matters

Folding in the flour. Folding gently keeps the air trapped in the whisked egg mixture. Stirring vigorously knocks out that air, leaving a denser, flatter cake.
