  1. Cream the butter and sugar together until soft.

  2. Add the egg and beat well for about 10 minutes.

  3. Stir in the flour.

  4. Blanch and chop the almonds, then add them to the mixture.

  5. Mix all well together to form a stiff paste.

  6. Turn the mixture onto a floured board and roll out to about ½ inch thick.

  7. Cut out rounds with a cutter about 2 inches in diameter.

  8. Stamp out the center of each round with a smaller cutter.
