Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the stock into a smooth, lightly bodied soup base.
Butter
Carries the flour and adds rich flavour to the soup base.
Milk
Adds creaminess and softens the soup's flavour.

The step that matters

Stir the flour and butter until the soup boils. Stirring keeps the flour evenly dispersed in the hot fat and liquid, so it thickens smoothly instead of forming lumps.

Swap the onion

How well each one fits the dish's main ingredients (turnip, butter, carrot, flour, milk):

  1. Leekfits better
  2. Parsnipfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against turnip, butter, carrot, flour, milk. Candidates are from the same food group and used in at least 100 recipes.
