Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the batter
Preheat the oven to 350°F (175°C).
In a bowl, cream together the butter and sugar using a wooden spoon.
Add the eggs one at a time, beating well after each addition.
Blanch the Brazil nuts, then pound them with the ground rice until fine.
Stir the nut and rice mixture into the creamed butter and sugar.
Add the brandy and mix everything well.
Fill and bake
Butter small round tins and fill each with the mixture.
Place a glace cherry in the center of each cake.
Sprinkle with sugar and bake for 40 minutes.

What each ingredient does
- Butter
- Creams with sugar to trap air and give the cakes a tender, rich crumb.
- Eggs
- Bind the batter and add structure while helping the cakes set as they bake.
- Brazil nuts
- Provide the main body and rich, nutty flavor in place of much of the flour.
- Ground rice
- Adds a fine, light texture and helps the crumb set without much gluten.
- Sugar
- Sweetens the cakes and, creamed with butter, helps lighten the batter.
- Brandy
- Adds aroma and flavor and a little moisture to the batter.
The step that matters
Creaming the butter and sugar. Beating butter and sugar together traps air in the fat, which gives the cakes lift and an even, tender crumb. Under-creamed butter leaves a dense result.
