Fried Lampreys

Ingredients

Directions

  1. Bleed the lampreys and save the blood.

  2. Wash them in hot water to remove slime and cut into pieces.

  3. Fry in a little fresh butter until not quite done.

  4. Pour out excess fat and add white wine.

  5. Season with whole pepper, nutmeg, coarse sea salt, sweet herbs, and a bay leaf.

  6. Add capers, a piece of butter rolled in flour, and the saved blood.

  7. Shake the pan often and cover it closely.

  8. Once cooked, remove the lampreys and strain the sauce.

  9. Bring the sauce to a boil, squeeze in lemon juice, and pour over the fish.

  10. Garnish with lemon and serve as desired.
