Hash
Ingredients
Directions
Flour the meat and place it in a clean stewpan with the hash.
Add mushrooms, pickle, ketchup, truffles, and morels; stir for a few minutes.
Beat half the brains and stir into the stewpan with a bit of butter rolled in flour.
Beat the remaining brains with lemon peel, nutmeg, beaten mace, thyme, parsley, and egg yolk.
Fry the brains in little cakes in hot dripping.
Dip oysters in egg yolk and fry them.
Toast slices of bacon.
In a hot dish, pour in the hash, layer with toasted bread, and top with forcemeat balls, fried oysters, fried brains, and lemon.
Garnish with bacon and serve.
