Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat flavor and, after long simmering, becomes tender.
Oatmeal
Thickens the cooking liquid slightly and adds body to the broth.
Carrots
Add sweetness and color to the broth as they soften.
Onions
Contribute savory depth and sweetness to the broth as they cook down.

The step that matters

Simmer gently with the pot covered. A gentle simmer keeps the liquid from boiling hard, which would toughen the meat and cloud the broth. The lid holds in moisture so the beef stays submerged and cooks evenly over the long time.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, parsnip, turnip, pepper):

  1. Leekfits better
  2. Beetrootfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, parsnip, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
