What each ingredient does

Scotch barley
Releases starch and body into the water during the long boil, thickening the broth.
Oatmeal
Forms a smooth paste with the melted fat that thickens the broth further.
Onions
Add sweetness and savory depth as they simmer in the broth.
Dripping or pot-top
Adds fat and richness, carrying flavour and giving the paste its smooth body.

The step that matters

Stirring the oatmeal and fat into a smooth paste. If the oatmeal is added without first blending it thoroughly with the melted fat, lumps form that do not disperse later. Working the paste smooth before adding the liquid lets the starch hydrate evenly and thicken the broth uniformly.
