Raspberry Vinegar

Ingredients

Directions

Infuse the vinegar

  1. Place 1 pound of fine raspberries in a bowl and pour 1 quart of white wine vinegar over them.

  2. The next day, strain the liquid over 1 pound of fresh raspberries.

  3. Repeat the straining process the following day without squeezing the fruit.

  4. Pass the liquid through a wet canvas to minimize waste.

Sweeten and bottle

  1. Combine the liquid with 1 pound of sugar for every pint of juice in a stone jar.

  2. Stir until the sugar melts.

  3. Place the jar in a saucepan of water or on a hot hearth to simmer and skim.

  4. Once cooled, bottle the raspberry vinegar.

What each ingredient does

Fine raspberries
Provide the flavour and colour that the vinegar takes up during steeping.
White wine vinegar
Extracts and carries the raspberry flavour and acidity into the liquid.
Fresh raspberries
Add a second batch of fruit flavour when the strained liquid is poured over them.
Sugar
Sweetens the vinegar and balances its acidity.
