Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides lean meat that gives the sausage its main body and bite.
Veal
Adds a mild, delicate meat flavour and a fine, tender texture.
Beef suet
Supplies fat that keeps the sausage moist and juicy as it dries.
Penny loaf crumb
Soaked in water, it holds moisture and softens the texture of the meat.

The step that matters

Hang to smoke until high-dried. Drying slowly removes water so the sausage keeps well and firms up. Hanging it wrapped in muslin protects the surface from dirt and insects while air dries it evenly.

Swap the sage

How well each one fits the dish's main ingredients (pork, veal, beef, pepper):

  1. Sagethe original
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleyfits less well

Fit is the average pairing score against pork, veal, beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
