To Preserve Yeast
Ingredients
Directions
Whisk the yeast until it becomes thin.
Wash a large wooden dish thoroughly and let it dry.
Using a soft brush, apply a layer of yeast inside the dish.
Allow the layer to dry completely before adding another.
Repeat until you have a thickness of 2-3 inches.
To use, cut a piece out and stir it in warm water.
For brewing, dip large handfuls of birch tied together in the yeast and let them dry.
