What each ingredient does

Beef breast
Long stewing turns the tough connective tissue tender and gives the meat its body.
Butter
Browned in a pan, it adds rich, nutty flavor and helps brown the meat's surface.
Egg yolk
Acts as a binder that helps the salt and spices cling to the meat's surface.
Onion
Flavors the stock with sweetness and savory depth as it simmers.
Turnip
Adds mild sweetness and earthy flavor to the stock and sauce.

The step that matters

Brown the beef in the butter. Browning creates Maillard reactions on the surface, producing deep savory flavor and color. Pale searing leaves the sauce tasting flat, so the meat needs enough heat and space in the pan.

Swap the turnip

How well each one fits the dish's main ingredients (beef, onion, carrot, egg, butter):

  1. Potatofits better
  2. Leekfits better
  3. Chivefits better
  4. Turnipthe original

Fit is the average pairing score against beef, onion, carrot, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
